This is one of the twelve cheeses that are part of our gourmet collection, the "affinate Ciotti". In this case they are forms of Cacio di Vicio (produced from cow's milk with a pressed paste) which are refined first by maceration and then under vacuum with fresh pomace of Montefalco Sagrantino DOCG re-wetted with Montefalco Rosso DOC. This is a particular treatment that recalls the tradition of drunken cheeses. It appears to have a compact texture but slightly softer than a Vicio with the same maturation thanks to the rehydration that took place with the wine. It is a particularly fragrant cheese with intense floral and wine notes, it is sweet and soft on the palate.
