From the re-enactment of the ancient Pretoriano cut, our master butchers have created a variant of this wonderful product, sweeter and "peaceful". The Pretoriano Feather is a part of the pig's shoulder, strictly Umbrian, softer, leaner and for this reason it was decided to select it to make it acquire completely different notes from its "parent". The anatomical cut, once trimmed from the bone, is subjected to a particular seasoning in conditions different from the Praetorian one, which allow the Piuma to acquire gentler notes on the palate
