In this case, the cheeses are Cacio di Vicio (a pressed cow's milk product) that, before being cured, are washed with hot water and prepared to be wrapped in sterilized beeswax sheets brushed with Umbrian wildflower honey. The beeswax (inedible) applied in this way imparts pleasant floral notes and a subtle hint of vanilla. On the palate, the sweetness dominates, offsetting the slight acidity provided by the cheese's freshness.
