Tuscan pecorino produced with pasteurized sheep's milk, aged for at least 10 days, with the addition of green PDO Bronte pistachios to the curd after breaking the curd. It has a straw yellow rind and a soft but compact texture, ivory in color interspersed with fruits. On the palate it has a tender and soluble consistency and a predominantly savory, acidic flavor with light sweetish notes. The aromatic notes are harmonious and balanced, with good lactic and animal scents in addition to those of pistachio.
