Cheese produced with sheep's milk from Umbria and Lazio, with a semi-cooked and raw texture. Aged 90-150 days or longer. It has a smooth, shiny and deep straw yellow rind, a uniform, semi-hard, compact paste, pale straw yellow, slightly streaked. In the mouth it is soluble and elastic.
