It is a semi-hard pasteurized goat's milk cheese with a maturation period of between 90 and 180 days. It has a non-edible washed rind of orange, ivory colour, with mold imprint and unctuous. The moist, compact paste, pale straw yellow in colour, has small, non-uniform holes. In the mouth, Toma has a medium sweet and rather savory flavor with a slight acidic note given by the type of milk. The main aromas are melted lactic, animal and dry vegetal.
