VARIETY AND CURIOSITIES
Sotto La Quercia Costa Toscana Merlot IGT by Le Sode di Sant’Angelo best expresses the character of the terroir of the metalliferous hills in which it grows. It is obtained from pure Merlot grapes, harvested in the first ten days of September with a slight over-ripening of 50% of the grapes on the plant. These vines grow at 325 meters above sea level, in metalliferous, clayey and chalky soils exposed to the south/south-east. These grapes vinify in stainless steel for about 18 days with frequent pumping over and wetting and with at least 3 delestages during the entire fermentation process. It ages for 12 months in new French oak barriques and second or third passage Balkan oak.
