Extra virgin oil obtained from selected 100% Moraiolo olives, hand-picked slightly earlier than the degree of ripeness, to allow the full intensity of the cultivar to be expressed. The rich content of polyphenols is transferred from the olive to the oil through careful processing, exclusively cold, no later than 12 hours after harvesting, thus obtaining an intense fruitiness with unique freshness.
Intense green, it is characterized by herbaceous aromas and vegetal notes of thistle and artichoke, with greener tones of almond and balsamic hints. A strong charge of bitterness and spiciness gives it an unmistakable touch.
On bruschetta, grilled meats and mature cheeses, it is well suited for marinating both meat and fish.
