Extra virgin olive oil from the very first September harvest. A mix of native Umbrian cultivars, Leccino and Frantoio, deriving from the centuries-old olive trees of the Assisani Hills. Green oil with vegetal notes of cut grass and artichoke, almond, with a very intense and robust scent. The undisputed protagonist of every dish, it still appears light without unbalancing the gastronomic preparations.
