"Seven" is the oil we certify as DOP Umbria – Colli del Trasimeno. We produce "Seven" with olives harvested from an olive grove located near Lake Trasimeno, over 60 km from Trevi.
This particular area of Umbria boasts different varieties than those surrounding the mill, yielding more delicate oils. "Seven" is a blend of the various cultivars found in the area and is a lightly fruity extra virgin olive oil. On the palate, the bitterness and spiciness are light and balanced. Perfect with fish and raw meat and seafood.
